Yogurt is a mixture of milk (whole, reduced-fat, low-fat or non-fat) and cream fermented by a culture of lactic acid-producing bacteria, Lactobacillus bulgaricus and Streptococcus thermophilus. Low Calories - Our gelato contains fewer calories than other leading brands of ice cream. We think you will find that other low-fat versions or non-fat yogurt versions do not compete against our YOLATO gelato and sorbet.
Freshness - Typical ice cream is stored in three gallon cardboard containers and may contain preservatives to keep the ice cream fresh for several weeks. Our gelato will be made fresh daily at our store and served in five liter stainless steel pans to preserve the essence of the product and ensure the best taste.
Smooth Texture - Ice cream is typically served at a lower temperature and has a higher fat content, thereby giving it a hard texture. YOLATO gelato has a higher serving temperature with a lower fat content which makes for a more pleasant texture and robust flavor.
Overrun - This term describes the amount of air incorporated into the mixture while being processed in a batch freezer (ice cream maker). Lower overrun gives the ice cream a creamier texture and is more pleasing to the taste buds. Most ice creams typically have 100% overrun; YOLATO gelato has between 25 - 40% overrun.
